fried green beans with garlic

Cucumber, Avocado, and Basil Un-Salad
Serves 2 generously
Ingredients:
- 1⁄2 shallot minced
- 1⁄4 tsp sugar
- 1⁄4 tsp salt, plus more for seasoning
- 1 Tbs lemon juice
- 1⁄2 Tbs white wine vinegar
- 2 Tbs extra virgin olive oil
- 3 plum tomatoes, chopped
- 1 medium cucumber, peeled and chopped
- 1 ripe avocado, peeled, cored, and chopped
- 2 Tbs chopped fresh basil, plus more for garnish
- Pepper for seasoning
Directions:
- In a large mixing bowl, combine the shallot, sugar, and salt. Let stand 5 minutes.
- Add the lemon juice, white wine vinegar, and olive oil.
- Whisk well to combine.
- Add the tomatoes, cucumber, and avocado and toss to coat with the dressing.
- Add 2 Tbs basil, and stir gently to combine.
- Season to taste with additional salt and freshly ground pepper, if desired.
- Garnish with basil and serve immediately.
- Refrigerate any leftovers.
